Cottage Cheese Spinach Chicken

It sounds a lot harder to make than it really is, and looks amazing!

1 (10 ounce) package frozen chopped spinach, thawed
1/2 yellow onion, chopped
1 tsp. minced garlic
salt and pepper to taste
1 cup cottage cheese
4 skinless, boneless chicken breast halves
1 1/2 c seasoned bread crumbs
1/4 c grated parmesan cheese
2 tablespoons melted butter
1/2 c shredded motzerella cheese

Preheat oven to 350 degrees.
In skillet, sautee onion, garlic and salt and pepper for 3 minutes. Add spinach which has been drained and pressed of all water. Heat for 2 more minutes. Add cottage cheese.

In shallow dish, combine bread crumbs and parmesan cheese. Cut chicken breasts in half length wise. Coat one side in bread crumb/cheese mixture. Place spinach filling in center. Roll up, and secure with toothpicks. Drizzle with melted butter.
Bake for 25 minutes and top with motzerella cheese.

I did it with out butter and used olive oil, and it turned out just as awesome!
