Cheesy Bread

This is the most sinful bread you will ever eat. And now that that's out of the way, here's the goods-

1 loaf french bread
1 1/2 cups grated cheese (cheddar, colby, motzerella or I like to mix it)
2 heaping tablespoons mayo
butter (1/4-1/2 cup maybe?)
garlic salt

Preheat broiler. Mix the cheese and mayo together. Set aside. Cut and butter the french bread. Sprinkle with garlic salt. Spread the cheese/mayo mixture on the top (add more cheese if you like!)

Place it under the broiler until edges are crispy and cheese is melted. Devour the entire thing. Yum!

Lemon Cranberry Muffins

2 cups all-purpose flour
1 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt
2 eggs
1 cup milk
1/2 cup vegetable oil
1 teaspoon lemon extract (or 2 lemons juiced plus zest from one lemon)
1 cup fresh or frozen cranberries, halved
1/3 cup slivered almonds, toasted (optional)

Glaze:
1 1/2 cups powdered sugar
1 tsp milk
1/2 tsp vanilla
juice from one lemon

In a large bowl, combine the dry ingredients. In another bowl, beat the eggs, milk, oil and extract. Stir into dry ingredients just until moistened. Fold in cranberries.
Fill paper-lined muffin cups two-thirds full; sprinkle with almonds if desired. Bake at 400 degrees F for 18-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Drizzle glaze over tops when cooled, and let sit for at least 15 minutes before serving.

Fail Proof French Bread

Combine in Medium Bowl:
2 1/2 c. warm water
2 tsp. salt
2 Tbsp. oil
2 Tbsp. sugar
3 Tbsp. yeast
Add 3 cups of flour and work in with a spoon. Add 3 more cups of flour. Use hands and work it in really well. (I use my kitchen aid for all of it) Let set for 10 min. uncovered. Work down. Repeat 4 times. Divide dough into 2 balls. Roll out less than 1/2 inch thick. Roll up like you would a jelly roll. Seal the roll and pinch the ends. Place on a greased cookie sheet--both loaves. Let rise until double (about 30-45) min. Just before baking, slash the bread diagonally about 4-5 times ( just break the surface with your slashes)
You can brush the top with evaporated milk, or a mixture of 1 egg and 2 Tablespoons milk, then sprinkle with sesame seeds ( I just leave it plain.)
Bake @ 400 degrees for 25 min. makes 2 delicious and easy loaves of french bread.

Monkey Bread

This would be really yummy to make conference morning!
2 1/2 teaspoons active dry yeast
3 cups all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon salt
1/4 cup white sugar
2 tablespoons margarine, softened
1 cup water
1 cup margarine
1 cup packed brown sugar
1 cup raisins

DIRECTIONS
1. Remove baking pan from machine. Place yeast, flour, ground cinnamon, salt, white sugar, 2 tablespoons butter and water in the order that is recommended for the bread maker. Make sure that no liquid comes in contact with the yeast. Select dough cycle and press start.

2. When dough is complete, place dough on floured surface and knead 10 to 12 times.
In a medium saucepan on low heat, melt one cup of butter, stir in brown sugar and raisins ( 1/4 cup of chopped nuts is good too!). Stir until smooth. Remove from heat.

3. Cut dough in one inch chunks. Drop one chunk at a time into the butter sugar mixture. Thoroughly coat dough pieces, then layer them loosely in a greased Bundt or tube pan (or you could use a bread pan or 8x8 dish), staggering layers so you're plopping each dough chunk over a space between two below. Let rise in a warm, draft-free spot until dough is just over the top of the pan, 15 to 20 minutes.

4. Bake in a preheated 375 degree oven for 20 to 25 minutes or till golden brown. Remove from oven, place a plate face down in top of the pan and, using oven mitts to hold plate on pan, turn over both until bread slides out onto plate. Serve warm...and enjoy.

*Note: this could be made quicker by using three cans of refrigerated biscuit dough, and start at step 3.
