Over Run with Tuna Fish

Since WIC gives 6 cans of tuna per month to breastfeeding moms and Rhett is 4 months old, I have found myself over run with tuna fish. Does anyone have any good canned tuna fish recipes for me to try? I have heard of tuna fish casserole but don't have a good recipe for one.

No calorie chex mix

Ok, so thats a complete lie. But it makes you feel better when you eat it.

1 box corn chex
1/2 box rice chex
1 cup butter
1 cup sugar
1 cup light corn syrup

In a large bowl mix both flavors of chex. Set aside. In a saucepan, melt butter completly, and then add sugar and corn syrup. Bring to a boil, and boil for 1 minute. Pour over chex, and spread on wax paper to cool. Eat for lunch if you decide (not that I just did that...)

Lemon Cranberry Muffins

2 cups all-purpose flour
1 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt
2 eggs
1 cup milk
1/2 cup vegetable oil
1 teaspoon lemon extract (or 2 lemons juiced plus zest from one lemon)
1 cup fresh or frozen cranberries, halved
1/3 cup slivered almonds, toasted (optional)

Glaze:
1 1/2 cups powdered sugar
1 tsp milk
1/2 tsp vanilla
juice from one lemon

In a large bowl, combine the dry ingredients. In another bowl, beat the eggs, milk, oil and extract. Stir into dry ingredients just until moistened. Fold in cranberries.
Fill paper-lined muffin cups two-thirds full; sprinkle with almonds if desired. Bake at 400 degrees F for 18-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Drizzle glaze over tops when cooled, and let sit for at least 15 minutes before serving.

Sweet and Sour Meatballs

1 (20 ounce) can unsweetened pineapple chunks
1 egg
1 cup soft bread crumbs
1 garlic clove, minced
1 teaspoon salt
1/4 teaspoon pepper
1 1/2 pounds lean ground beef
2 large green peppers
1 cup chicken broth
1/2 cup sugar
3 tablespoons cornstarch
1/2 cup cider vinegar
3 tablespoons reduced-sodium soy sauce
6 cups hot cooked rice

Drain pineapple, reserving 1/2 cup juice (discarding remaining juice or save for another use). Set the juice and pineapple aside. In a bowl, combine the egg, bread crumbs, garlic, salt and pepper. Crumble beef over mixture and mix well. Shape into 40 meatballs. Bake meatballs at 400 degrees for 15-18 minutes, or until centers are no longer pink.

Cut green peppers into chunks. Add broth, peppers and reserved pineapple to meatballs in a large skillet. Bring to a boil. Reduce heat; simmer, uncovered, for 5-7 minutes.

Meanwhile, combine sugar and cornstarch in a bowl. Stir in the vinegar, soy sauce and reserved pineapple juice until smooth. Add to meatball mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve over rice.

Pasta and Veggie Soup

Everytime you make this you'll be guaranteed to get asked for the recipe!

9oz uncooked tortellini
1 medium zucchini, diced
1/2 yellow onion, chopped
2 large carrots, diced
2 stalks celery, diced
1 can stewed tomatoes, undrained
1 can corn (frozen works too), drained
2 cans veggie (or chicken) broth
15 oz. spaghetti sauce (no meat)
1 cup vegetable juice

Cook tortellini in boiling water until almost done, but still slightly firm.

In a stockpot, add zucchini, onion, carrots, and celery and broth and bring to a boil. Turn heat down and let simmer 5-10 minutes, or until veggies are tender.

Add all the other ingredients, including drained pasta. Let simmer 5 minutes.

Top with parmesan cheese, and serve with bread. Yum!

Chicken-Rice Skillet

This is one of our favorites, and I especially love it because it is SO easy. You practically just have to cook the chicken.

1 tbs vegetable oil
1 1/4 boneless skinless chicken breast, cut into 1" pieces (I use 2-3 chicken breasts)
2 cups water
1 tbs butter or margarine
1 bag (1 lb) frozen broccoli, red peppers, onions and mushrooms (or other combination), thawed and drained (we used a Fiesta Veggie tonight. Mmmm!)
2 cups uncooked instant rice
1 tsp salt
1/4 tsp pepper
1 cup shredded cheddar cheese (4 oz)
.
.
1. In 12-inch skillet, heat oil over medium-high heat. Cook chicken in oil 3-4 minutes, stirring occasionally, until no longer pink in center.
2. Add water and butter; heat to boiling. Stir in veggies, rice, salt and pepper. Sprinkle with cheese; remove from heat.
3. Cover and let stand for about 5 minutes or until water is absorbed.
.
.
Prep time: 5 min.
Cook time: 10 min.
Stand: 5 min.

3 egg yolks
2 tablespoons vanilla extract
1 1/2 cups all-purpose flour
2 tablespoons sugar
1/2 teaspoon salt
5 tablespoons melted butter
In a large bowl, mix all ingredients together until well blended. Heat a small skillet on medium-high and spray with cooking spray. Pour in about 1/4 cup batter, and tip pan to spread batter to edges. When bubbles start forming, flip over and cook the other side.
Serve warm with favorite fruit, chocolate sauce, and/or whipped cream.

Cafe Rio Pork Roast

5-6 lb Pork Roast
3 cans et Pato tomato sauce (you can either find this by the tomato sauces, or the Mexican food. it has a yellow label)
3 cans Regular tomato sauce
1 cup brown sugar
1/2 can Pepsi

Pour everything on top of roast in crock pot
cook on low 8-10 hours.
When finished, take it out and shred it, then put it back in sauce. ( I Like to dump out some of the sauce, because it's too much and makes the burritos way messy)
Wrap up in a burrito with your favorite fixings and Enjoy!

Favorite Pizza Dough and Sauce

Dough
1 cup warm water
1 tbsp. sgar
1 tbsp. yeast
2 tbsp. oil
2 1/4 to 2 3/4 cups flour
Mix and knead, let sit while preparng pizza toppings
Flatten into pan let sit for 10 min.
Add Pizza toppings and bake 370 to 400 degrees for 15 to 20 minutes.

I like to cook the crust for about 10 minutes and then add the toppings and finish cooking

Sauce
1 15oz can tomatoe sauce
1 tsp. garlic powder
1/2 tsp. onion powder
1/2 tsp. oregano
1/2 tsp. basil

Fail Proof French Bread

Combine in Medium Bowl:
2 1/2 c. warm water
2 tsp. salt
2 Tbsp. oil
2 Tbsp. sugar
3 Tbsp. yeast
Add 3 cups of flour and work in with a spoon. Add 3 more cups of flour. Use hands and work it in really well. (I use my kitchen aid for all of it) Let set for 10 min. uncovered. Work down. Repeat 4 times. Divide dough into 2 balls. Roll out less than 1/2 inch thick. Roll up like you would a jelly roll. Seal the roll and pinch the ends. Place on a greased cookie sheet--both loaves. Let rise until double (about 30-45) min. Just before baking, slash the bread diagonally about 4-5 times ( just break the surface with your slashes)
You can brush the top with evaporated milk, or a mixture of 1 egg and 2 Tablespoons milk, then sprinkle with sesame seeds ( I just leave it plain.)
Bake @ 400 degrees for 25 min. makes 2 delicious and easy loaves of french bread.

Fold in whipped cream. Place half of cake cubes in a 2 quart serving bowl. Top with half of the cream mixture. Carefully spread with jam. Sprinkle with 1 cup raspberries. Layer remaining cake cubes, cream mixture and raspberries. Garnish with chocolate curls (if desired.)

Fresh Basil and Tomato Pasta Sauce

My friend gave me this recipe and it is amazing!

3 large tomatoes
1 c. packed fresh basil leaves
3T butter
Salt to taste (about half a teaspoon to start)

Heat a large frying pan over medium heat. Chop the tomatoes into chunks. When the skillet is hot, melt the butter and sautee the basil leaves in the melted butter until soft, about a minute. Throw in the tomatoes and salt and cook down until the tomatoes get soft and chunky, at least 15 minutes. You can mash down the tomatoes and serve it as is, or puree it in a blender for a smoother sauce. Serve over whatever type of pasta you want.

Warm Italiano Spread

This is what you need:
1 pkg. (8 oz.) cream cheese
1/4 cup pesto
1 tomato, chopped
1/4 cup shredded Italian cheese (or mozzarella)
Triscuit Crackers

Put it all together on some tin foil (you may want to double it up), fold it up so it can't ooze out and put it on the grill for at least 10 minutes (until the cream cheese is soft).

This was soooo yummy. I made it for a BBQ on Memorial Day, and it was a hit! Again, not my original recipe, but thanks to KraftFoods, I have tons of yummy recipes.

Marvelous Mini Meatloaves

I cannot take credit for this recipe, it comes from Kraftfoods. These were so yummy, and we all loved them, and the great thing too, is they are easy to make ahead and freeze, if you're looking to put something away for a quick meal one day.

What You Need

Take 1 lb. ground beef, 1 pkg. Stuffing Mix and 1 cup water and mix & match your recipe from these options...

seasoning optionsadd-in choicescheese possibilities

1 tsp. Italian seasoning 3/4 cup spaghetti sauce 3/4 cup Shredded Mozzarella Cheese
2 tsp. chili powder 3/4 cup salsa 3/4 cup Shredded Mexican Style Cheese

1 tsp. dried oregano leaves 3/4 cup chopped roasted red peppers 3/4 cup Traditional Crumbled Feta Cheese

1 tsp. garlic powder 3/4 cup Barbecue Sauce 3/4 cup Shredded Cheddar Cheese

What To Do Next

PREHEAT oven to 375°F. Mix meat, stuffing mix, water and the seasoning until well blended. Press evenly into 12 medium muffin cups sprayed with cooking spray; make an indentation in center of each with back of spoon.

SPOON add-ins evenly into indentations in meatloaves.

BAKE 30 min. or until meatloaves are cooked through (160°F). Top evenly with cheese; continue baking 5 min. or until cheese is melted. Let stand 10 min. before serving.(I didn't even bake mine again after adding the cheese because my meat was cooked through, and the cheese just melted on its own).

So easy and so yummy! We had rice and green beans with them. Oh, and you can even add A.1. in with the ground beef/stuffing/water/seasoning mix for an extra something special!
