1 lb boneless, skinless chicken breasts, cut into strips (or for an even quicker meal use canned chicken breast)
1 cup mild salsa
1 (1.4 oz) package taco seasoning mix
2 cups Minute Rice white, uncooked
8-12 flour tortillas
2 cups water
1 tbsp oil
Heat 1 tablespoon oil in skillet. Add chicken and cook until lightly browned. Add water, salsa and seasoning mix. Stir and bring to a boil. Stir in rice and cover. Cook on low heat for 5 minutes or until chicken is cooked through. Spoon chicken mixture onto tortillas. Top with your choice of toppings: lettuce, cheese, tomotaoes, sour cream, black beans, olives, etc. Fold up sides to enclose filling.
