Shepherd's Cobbler

Just a little different from regular peach cobbler.

1 C Sugar
1 qt. Canned fruit (peaches work best)
1 Egg
1 tsp Vanilla
1 tsp Lemon extract
1 1/2 C Milk
1 1/2 C Flour
1 1/2 tsp Baking powder
1 tsp Nutmeg (optional)

Melt 1 square of butter in a 9" X 13" pan. Combine all cake ingredients (everything but fruit.) Mix well and pour over margarine. Then drain about half of the juice off a quart of fruit. Pour the quart of fruit and remaining juice over the cake mixture. Bake at 350 F until light brown on top and cake is done - approx. 30 min. Serve warm or cold with ice cream or whipped cream.
