This is own of my favorite meals from childhood. It is such an easy tasty Mexican dish. It does make a ton of food so if you want to cut the recipe cut everything but the oregano, green chilies and pimentos to keep the flavor. It does freeze well so we usually make the whole recipe and freeze half for a day we don't want to cook!
2 ½ pound pork roast
2 ½ cups pinto beans
8-10 cups water
½ cup chopped onion
2 gloves of garlic
1 Tbsp salt
2 Tbsp chili powder
1 tsp oregano
2 Tbsp cumin
4 oz can green chilies
1 large jar pimentos
Cook in a crock-pot on high covered for 5 hours and then cook ½ hour uncovered to thicken. Serve over Frijtoes with cheese, lettuce, sour cream, salsa, black olives or any other toppings.
