Scones/Navajo Tacos


To make the scones:

1 c. Hot mashed potatoes
1 tsp. Salt
4 Tbsp. Vegetable oil
Mix these three ingredients and let cool

1 Tbsp Yeast
2 c. Warm milk
2 Tbsp sugar
Dissolve sugar in milk. Add yeast and let it dissolve.

2 beaten eggs
1 c. flour
Add eggs to mashed potato mixture and mix thoroughly. Then add 1 cup flour and mix. When flour is mixed in add yeast and potato mixture together and mix until mostly smooth. Add about 5 cups flour a little bit at a time until dough is smooth and elastic.
Let rise until double in size. Pour a little oil onto cutting board and roll out portions of dough, cutting into desired sizes. Fry in hot oil until light brown turning over half way.

Top these off with honey butter or make them into Navajo Tacos.

To make the scones into Navajo Tacos simply top the scones with beans or chili, cheese, lettuce, tomato, bell pepper, onion, olives, etc. Top it off with salsa and/or ranch. Enjoy!

So so so so yummy! Especially with honey butter!
